Pork chops with apples and maple
For 6 persons
6 pork chops ½ inch (1,3 cm) thick
2 spoons of butter (30 ml)
3 spoons of grated maple sugar
1 big onion finely sliced
1 big apple pealed off and cut in 6 slices
½ cup of apple juice (125 ml)
1 spoon of Dijon mustard (15 ml)
½ spoon of tarragon (7,5 ml)
Salt and pepper
Preheat the oven at 350F/180C (T/6).
Take off the excess of grease and what is left on the pork chops.
Warm up the butter and the maple sugar in a large casserole. Put the chops
in the casserole so that they turn golden, then put them in a dish into
the oven. Add salt and pepper.
In the same casserole, fry the slices of the onion for 1 minute and put
them on top of the chops with the slices of apple. Deglaze the bottom of
the casserole with the apple juice and add mustard and Tarragon.
Pour it on the chops. Cover with aluminium but let it loose. Cook in the
oven for about 45 minutes or more. Serve with mashed potatoes and a julienne
of vegetables.
